Our Review

Waffles is taking the 100-year-old soul food staple of fried chicken and waffles and running with it, cooking up waffles with chicken and bacon, braised short ribs, pork and lamb meatballs, and more. If it works in a Bronzeville chicken shack, the thinking seems to go, why not in a loft-style space with a more upscale clientele? The best part about the restaurant is that seems to have its namesake down, offering both Liege and Brussels waffles. I hadn’t heard of the former—Americans know Brussels waffles as Belgian waffles—but from now on I’ll be on the lookout for the denser, sweeter, more pucklike Liege, which almost blows the other type out of the water here, especially in the savory dishes. And for dessert, or a more lavish breakfast, Waffles infuses the batter with red velvet, green tea, or chocolate, a gimmick that works, thanks to the heaping toppings. But the savory waffles still need some ironing out: the pork shoulder and poached egg in the waffle Benedict were bland and the chicken and bacon only stood out for a slightly spicy maple syrup. Still, the worst part is the restaurant’s hours: they’re open from 7 AM to 3 PM, meaning no drunken, late-night pit stops for a red velvet waffle slathered with cherry compote and whipped cream cheese, engineered to hit the spot.
