I had always assumed, based on my mother's easygoing Thanksgiving Day manner, that roasting a 22-pound turkey was a breeze, but now that I'm old enough to make my own bird--and my mother lives 500 miles away--I need some tricks of the trade stat. I could pay $20 for The Joy of Cooking, but why should I when the Calphalon Culinary Center is offering free 45-minute turkey demonstrations covering everything from basting to carving on November 11 at 10 AM, 11 AM, and noon. And then of course there'll be free turkey--they're not going to just throw out those perfectly prepared birds. Check the Calphalon Web site for other free classes in specialties like fondue making and muffin baking.
