A cocktail based on the bar's proprietary Old Tom gin, topped off with Frog Greishaw's home-brewed ginger kombucha.

The ingredients: Gran Classico Bitter, Frog Greishaw's homemade ginger kombucha, house-made ginger liqueur, lemon juice, Scofflaw Old Tom Gin, and (in front) house-made raspberry syrup

Start with an ounce and a half of Scofflaw Old Tom Gin.

Add three quarters of an ounce of freshly squeezed lemon juice.

Half an ounce of raspberry syrup.

And half an ounce of ginger liqueur (Scofflaw makes its own).

Add a quarter ounce of Gran Classico Bitter (an Italian liqueur similar to Campari).

Strain into a collins glass over three ice cubes.
