Step-by-step instructions for making Jay Schroeder's PEZ cocktail

"You can imagine sipping it out of a Juicy Juice box," said Jay Schroeder of his genever-based Declaration of Neutrality.

"I had a choice of this or a princess or some cartoon character," said Schroeder. "I decided Winnie was the way to go."

To make his PEZ syrup, Schroeder dissolved candies from an entire packet of lemon PEZ with an equal amount of water.

Start with three quarters of an ounce of freshly squeezed lemon juice.

Add an eighth of an ounce of the PEZ syrup.

Then add half an ounce of thyme-infused simple syrup.

To that add three quarters of an ounce of Dubonnet Rouge, a wine-based aperitif that gives the drink its rosy tinge.

Then an ounce and three quarters Bols Genever, Dutch gin. "Genever and thyme love each other very much," said Schroeder.

Add ice and shake.

If desired, rim a rocks glass with powdered PEZ, but only halfway around, so it won't overpower the drink.

Strain the drink over ice.

Garnish with a twist of lemon . . .

A sprig of thyme . . .

And if you like, a PEZ head. "There's a nonedible garnish," said Schroeder.
