The world runs on cheap cuts of meat. Asian cuisine in particular is the high art of making 3 oz of cheap cuts of meat feed a family of eight. What's so bad about cheap cuts of meat? Sorry to inform you that nobody's figured out how to raise a herd of free-range USDA Prime tenderloins; steer are mostly comprised of cheap cuts of meat.
