"That's edible?" an onlooker asked Sable bartender Alex Renshaw as he readied his ingredient, chalk. "It's nontoxic, at least," he said, then proceeded to use colored sidewalk chalk in powdered form as a thickener for his cocktail, the Teacher's Pet. To give the applejack-based concoction some bite he turned to Campari; Cynar, an Italian amaro made from artichokes, adds complexity ("It's a fun shot for bartenders," says Renshaw).

Teacher's Pet

3/4 oz freshly squeezed grapefruit juice

1/2 oz lemon juice

1/2 oz simple syrup

1/4 oz Cynar

1/2 oz Campari

1/2 oz Cruzan Black Strap rum

1 1/4 oz Laird's Straight Apple Brandy

1/4 oz ground chalk

Combine ingredients, then dry shake to mix well. Add ice and shake again. Double strain into a chilled coupe glass.

Who's Next:

Renshaw has challenged Uby Khawaja of Scofflaw with kombucha, fermented tea. His tasting notes? "I get tea out of it, a little bit of honey and vinegar," Renshaw says.
