Kevin, your Veggie Feature is a breath of fresh air, thank you! I love food and eating out, but the tired old topics of animal organs and butchers who take pride in disembowelment is as embarrassing as it wasteful gluttony. I went veg at 12, and now, 20 years later I'm vegan and couldn't be more endowed with options in this fabulous city. The tradition of eating meat in the nation's urban centers like Chicago, is experiencing a surge in new, healthy, creative, and sustainable consumer mentality... and businesses are listening! One of the most convincing films that provides evidence that vegetarian diets are the future, is "Forks Over Knives". I've watched it with many friends and loved ones, and guarantee it will convince the viewer that in terms of health and wellness, the plant-based diet will save America. Keep writing Kevin, a lot of readers are listening and nodding.

Way to go Julia. Your promotion of nitrosamines in the 5/12/11 Key Ingredient feature is a (less than) tremendous contribution to the health and wellness of your readers. The scary family of chemicals standard in a vienna beef hot dog and the carcinogenic effects (The China Study,2006) of their consumption is a culinary reference Chicagoans are better off not encouraged to consume. The prevalence of heart disease, cancer, and diabetes is a grim reminder that nutrition ignorance is rampant and propagated by misinformed food critics with a propensity to be self-indulgent in step with the status quo, such as yourself. Animal exploitation apologists like Doug Sohn and Barry Sorkin are the city's Encased Corpse Chemical Kings, and are lucky to have friends like you promoting their harmful products. I recommend you view the documentary, "Knives over Forks" for a better perspective on the latest plant-based diet science and the patron-health-ignorant restaurateur opportunists lauded in your restaurant features.
