What the hell do you know about whether or not he can cook!? HE CAN! You don't trail or stage' in restaurants of Chef Zakarian and get offered a job that runs as tight and strict as his Chef de Cuisine Doug Psaltis runs them and get offered a spot unless you have the craftsmanship skill and intelligence to man a station in a restaurant of this caliber. He's proved himself this way many times and burned a few bridges. But he admits that! The point of his story is struggle. Read his book and see that we were gifted the opportunity to read someone sharing his flaws and "fuck-ups" on the scene and in his career for our entertainment and or inspiration. I can relate and have fucked off many a job due to relatable circumstances and his story has lifted some weight on my conscience and given me a new perspective on the future and opportunities that have blessed me as of recent. Give the guy a break. He doesn't claim to be some master deity ego trip chef. He's just telling his story because he was given the opportunity to do so and I'm sure there was good reason and incentive to do so. Brandon, do your thing, I wish you well in your new endeavours.
