I recall being told this a few years ago but haven't been able to verify the validity of it so take it as a good story unless you want to dig into the research (hopefully someone else knows): Apparently it qualifies as a liquor if you pour it straight in, which falls under different licenses. This is why beer is aged in the spent barrels to acquire the taste vs. the mixing of the two at the time of distribution.

More realistically I believe it's to ensure a homogeneous mixture. For a small batch though that is bottled within 15min, I haven't had issues of consistency of taste. In the past I'll soak 3 - 5 vanilla beans in the bourbon beforehand and that gives off a nice vanilla aroma on the head.

Thanks for the love & glad you got to try the Devils Cut! It's a base porter recipe I've been working on for a bit & would be more than happy to share with anyone that wants it. Largely 2 row with Crystal (10L) and Chocolate Malt. Pearle & East Kent for hops. The Devil's cut is 2 1/2 cups of the bourbon poured into the bottling bucket prior to bottling the beer. It sat for 1 month before serving.
