The largest of the new crop of local distilleries, CH also looks the most similar to a traditional bar. It’s open five nights a week and offers not only a dozen-odd cocktails, but also a brief and eclectic food menu—potato pancakes, caviar, shrimp cocktail, a selection of cheeses, meats, and nuts, and a couple desserts. But should you forget that the vodka (the house specialty), gin, rum, whiskey, and limoncello are all made on-site, just take a look through the window behind the bar at the enormous stills. —Julia Thiel
