I just saw this, but feel I must add a few words. 'The Hows and Whys of French Cooking' was the first cookbook I bought, over forty years ago when I first went out on my own, knowing how to cook exactly three things: chili, my mother's spaghetti sauce, and a Stouffer's frozen Chicken Pot Pie. Mrs. Lach's book was a revelation, even if the first recipe I ever attempted went horribly wrong :) I recovered (and my guests consented to come to dinner again), and many of her recipes have become go-to standards. I owe her a great debt of gratitude.
