Two Aussies—Sixteen executive chef Frank Brunacci and Perth native Craig Hopson, who’s visiting from New York’s Le Cirque—prepare a six-course meal with wine pairings to mark the onset of Australia Week. The meal begins with an amuse bouche of hiramasa escabeche, ends with dessert of fennel pavlova with banana chantilly and lemon granité, and in between includes courses of fish, game, meat, and cheese. The menu is served all night.
