Not to nitpick a well written review(as usual), but I think you have the terms backwards. La is hot. Ma is actually the character for hemp, but in this case refers to the Szechuan peppercorn plant.

BTW, fei pian are lung slices, which the original dish fu chi fei pyan (married couple's lung slices)was made with. I have only had the real dish once, and the lung slices were delicate and beautiful like fine lace.

Oh come on, David. French fries are deep-fried potato sticks and salt, period. Making such a simple and pedestrian dish into something exceptional is a true art. Putting duck liver on them just makes them into some kind of yuppified foodie abomination. The potatoes become secondary to the topping. $10 fried potatoes covered with liver are not what most Chicagoans would consider fries. The title of this category should be changed to Chicago's most expensive potatoes. Only one question, did you put catsup on them?
