Allison Hagio demos the Walk the Plank

Hagio chose her ingredients to "mask and complement" Spam: Tajin seasoning for the rim, rhubarb bitters, Luxardo cherry liqueur, and Ron Zacapa Centenario 23-year-old aged rum.

She tried making a simple syrup with the Spam, but that didn't work, so she grilled slices of it with fruit (pineapple or peaches), then made "Spam juice" (rear) with the fat and liquid, adding maple syrup and Old Overholt rye.

To make the cocktail, start with 3/4 ounce of fresh lime juice.

Add to that 3/4 ounce Luxardo cherry liqueur.

Add half an ounce of the "OO Spam juice."

Then add one and a half ounces of Ron Zacapa Centenario 23 aged rum

Add to that a couple dashes of Fee Brothers rhubarb bitters.

Stir slightly and add ice.
Alison Green
Cap with a shaker.
Alison Green
Shake well.
Alison Green
Rim a glass with juice from the fruit and Taijin seasoning, a mixture of chile and salt frequently used with elotes or mango (it's all of $1.69).

Strain the cocktail into the prepared glass.
