Behind the Scenes of Key Ingredient With Mindy Segal

There's bad news and good news: the bad news is that we're unable to share this week's Key Ingredient recipe, for Mindy Segal's carrot cake and cheesecake with coconut sorbet, walnut "candy bar," butterscotch, and toasted quinoa, with sorghum syrup worked into nearly every element. I did try to get it. I asked nicely, coaxed, cajoled, you name it—everything short of begging. (I have to draw the line somewhere.) No luck. Which is really too bad, because it was absolutely delicious. The good news? It's currently on the menu at Hot Chocolate, so you can still taste it. It's $12, but I'd say it's worth it.

In place of the recipe, though, this week we're able to provide a behind-the-scenes look at Segal's Key Ingredient shoot. We were filming in the front kitchen, where diners at Hot Chocolate can see the chefs at work during regular hours, but Segal had to go in the back kitchen several times to grab stuff. She was miked the whole time, a fact which she may or may not have remembered while she was back there. Transcribing the audio later, I discovered a few gems from these trips out of earshot. The first:

The singing wasn't a surprise; she was doing that off and on the entire time she was cooking. The content? Well, she was clearly busy, but she was also perfectly pleasant to us while we were there. The second is my favorite:

I have to say, Segal's asides made my transcribing work infinitely more entertaining. Every time she said she had to go grab a whisk, I'd hold my breath, waiting for more—though after these two snippets, I was always disappointed. While I would have loved to have the recipe, the laughs these comments provided me (and others in the office) isn't a bad consolation prize.
