Thanksgiving at Mercat a la Planxa

A Catalonian variation on the traditional American holiday meal, beginning with Aragones cheese with sherry-bacon caramel, Serrano ham and fig salad with La Peral cheese, spiced almonds and sherry-shallot vinaigrette, and a Spanish-style omelet with potatoes, spinach and saffron aïoli. The second course includes costillas de ternera, a braised short rib flatbread with bacon marmalade, Parmesan and arugula; bacon-wrapped dates stuffed with almonds; garlic shrimp; and pelotas de calabaza con cordero, butternut squash dumplings with lamb ragoût and black truffle-beech mushroom escabèche. Then there's smoke-roasted turkey with sherry pan gravy and cranberry-orange compote; sides include cauliflower gratin with Marcona almonds and black truffles, whipped Yukon Gold potatoes with mushrooms and brandied mushroom gravy, and rosemary-chestnut stuffing with foie gras and celery root. Dessert is croquetas de xocolata, chocolate croquettes with banana marshmallows, rosemary caramel, and Arbequina olive oil. $65, $85 with wine pairings.
