Cute article, a nice read. A desperate attempt by Reader to be radical paper alas only to end up pleasant reading. Perhaps you should stick to articles on how to store your bicycle efficiently in your apartment rather than real life issues

Obviously this "veteran radio host of certain age" made an impact on you assume that old people don't like loud music.
Unlike some other movements, so far "science food" has had no impact on the general public as any worthwhile concept to emulate.
It is a fad of few, followed by few, especially by reviewers like you to stay relevant, basically a club where the chefs can talk tough and do over the top hip things, yes like actually dangle food.
Once the food trend went in the direction of expensive ingredients, acrobatics to impress and prices to make it feel like it is special it lost its general following and became the favorite of "extreme foodies"
Sure they have a strong following and pack them in, but so does Calo Restaurant.
I guess time will tell which one is a gimmick. Pig tails topped with "Greek" yogurt, do these guys know what yogurt is.
I know, I know I sound like some old grudge who is stuck in a generation gap, I however still like loud music which you might not when you get to that certain age, what 50?
