The newest addition to Harvey's beer wall is a bottle of bourbon-barrel-aged Dark Lord from Three Floyds Brewing in Munster, Indiana. Even regular Dark Lord is pretty hard to get—it's sold only one day a year, at the brewery—and the bourbon-barrel aged stuff exponentially more so.
Harvey, a server, bartender, and brewery tour leader at Goose Island, estimates that he has more than 600 bottles of beer, most of them large-format. They include Westvleteren 12, one of the highest-rated and rarest beers in the world; Sam Adams Utopia, the strongest naturally brewed beer in the world; Portsmouth Brewery's Kate the Great; and a bunch more rare stuff.
The shelves of beer aren't just for show, though: Harvey cracks open bottles on a regular basis. "It is a conversation piece, but the beer's got to get drunk."
