Eat the Mangalitsas

Over the next several weeks a number of area restaurants will host dinners centered around Mangalitsas, the rare Austro-Hungarian heritage breed that was the subject of Mike Sula's recent feature Meet the Mangalitsas.

The first is the only one whose menu is already set: Paul Virant (Vie), Giuseppe Tentori (Boka), Ryan Poli (Perennial), and Stephanie Izard (whose new restaurant, currently named the Girl and the Goat, is set to open in March) will team up at Vie December 15 to create a five-course meal including headcheese with parsnip puree, pickled watermelon radish, and sourdough chips; milk-braised ham with persimmons and chestnuts; braised bacon and hamachi with radish, apples, and caramelized shallots; and fabada Asturiana, a Spanish stew of pork shoulder, chorizo, and white beans.
The next day the same chefs will prepare a different meal at Boka while Patrick Sheerin hosts his own six-course menu with wine pairings at the Signature Room at the 95th. Then on December 21 Chris Pandel will serve a six-course Mangalitsa dinner at the Bristol.
Finally, Mike Sheerin plans to offer an eight-course tasting menu at Blackbird starting January 4 and continuing through the month—possibly longer if it’s popular. Offerings will include whipped smoked lardo, testa tortellini in pozole consomme, and chocolate-covered chicharrones. Unless otherwise noted, prices do not include tax and tip.

I like the way the photo undercuts the message in the article. He looks like something between a house pet and an inflated version of a distant relative--perhaps how my Austrian ancestors might have looked if they hadn't all been poor and lean.
